They embody simplicity and elegance, making them ideal for both novice bakers and seasoned dessert enthusiasts looking for a quick yet impressive recipe.

Why You’ll Love These Mini Chocolate Mint Cream Pies

Making desserts can sometimes feel like a daunting task, but not with this recipe. These mini cream pies are a breeze to assemble, saving you time without compromising on taste or presentation. Here’s why they’ll become your go-to dessert:

**Effortless Elegance:** Despite their sophisticated appearance, these pies are incredibly simple to make, largely thanks to a clever shortcut for the filling.

**Perfect Portions:** The mini size makes them ideal for parties, picnics, or simply satisfying a sweet craving without overindulging. No slicing, no mess – just pure, individual joy.

**Flavor Harmony:** The intense chocolate notes from the rich cream filling perfectly complement the refreshing zing of the mint whipped cream, creating a harmonious flavor profile that’s both comforting and invigorating.

**Versatile Treat:** While perfect for St. Patrick’s Day with their green hue, these pies are delightful any time you’re in the mood for a classic chocolate mint combination.

**Customizable:** Easily adapt the intensity of mint or type of chocolate to suit your preference, or experiment with different garnishes for a personalized touch.

Initially, the idea for a full-size chocolate mint pie for St. Patrick’s Day was exciting, but after a successful (and unfortunately un-photographed) test run, the decision was made to go mini! Mini pie crusts offer a unique charm and are surprisingly fun and straightforward to create. Don’t let the thought of extra steps deter you; the process is quite rewarding. Even if you don’t have a mini muffin tin, a standard pie crust can be baked and then the filling and topping directions followed for a delicious larger pie. The key is flexibility and enjoying the baking process!

Crafting the Irresistible Layers

The Perfect Mini Pie Shells

Starting with Pillsbury refrigerated pie dough makes preparing the mini crusts incredibly easy. This shortcut ensures a consistently flaky and tender base for your pies. The process involves simply unrolling the dough, cutting out circles, and gently pressing them into a mini muffin tin. A quick bake in a hot oven results in perfectly golden, bite-sized shells, ready to be filled. Don’t worry if you need to re-roll the dough a couple of times to get more circles; just handle it gently to maintain its flakiness.

Decadent Chocolate Cream Filling

For the chocolate cream filling, we take a convenient route by using instant chocolate pudding mix. However, this isn’t just any pudding mix! We elevate it to a rich, deeply chocolatey experience by incorporating unsweetened cocoa powder and a blend of half-and-half and milk. The cocoa powder intensifies the chocolate flavor, while the half-and-half adds a luxurious creaminess that transforms standard pudding into a gourmet filling. A touch of vanilla extract rounds out the flavors beautifully. This “cheating” method results in a filling that tastes homemade and incredibly satisfying.

Heavenly Mint Whipped Cream Topping

Prepare for a new obsession: homemade mint whipped cream. If you’ve never experienced the refreshing burst of mint combined with light, airy whipped cream, you’re in for a treat. This topping is simple to make but delivers a powerful flavor punch. Heavy cream is whipped to stiff peaks, then gently sweetened with powdered sugar and infused with pure mint extract. A few drops of green gel food coloring give it that iconic minty hue, making your pies visually stunning and perfectly themed for St. Patrick’s Day. The freshness of the mint whipped cream perfectly complements the richness of the chocolate filling, creating a balanced and incredibly delicious dessert experience.

Tips for Success

**Chill Your Ingredients:** For the best whipped cream, ensure your heavy cream, mixing bowl, and whisk attachment are all well-chilled before you begin. This helps the cream whip up faster and hold its peaks better.

**Don’t Overbake the Crusts:** Mini pie shells bake very quickly. Keep a close eye on them to prevent over-browning. They should be just lightly golden.

**Sift Cocoa Powder:** Sifting the cocoa powder for the chocolate filling helps prevent lumps and ensures a smooth, uniform texture.

**Adjust Mint Flavor:** Start with the recommended amount of mint extract and add more to taste. Mint extract can be quite potent, so it’s always better to start small and build up the flavor.

**Piping Bags for Precision:** Using piping bags for both the chocolate filling and the mint whipped cream will give your mini pies a professional and neat appearance. If you don’t have one, a large Ziploc bag with a corner snipped off works perfectly.

**Garnish Creatively:** Elevate your pies with garnishes like chocolate shavings, mini chocolate chips, a dusting of cocoa powder, or a drizzle of chocolate syrup.

Making Ahead & Storage

These mini pies are wonderful served fresh, but they can also be prepared partially or fully in advance.

**Pie Shells:** The baked mini pie shells can be stored in an airtight container at room temperature for up to 2 days, or frozen for up to 2 weeks.

**Chocolate Filling:** The chocolate cream filling can be prepared a day in advance and stored in the refrigerator in a piping bag or airtight container.

**Mint Whipped Cream:** It’s best to prepare the mint whipped cream fresh, just before assembly, for the fluffiest texture. However, it can be made a few hours ahead and stored in the refrigerator in a piping bag.

**Assembled Pies:** Once assembled, the pies should be stored in the refrigerator. They are best enjoyed within 1-2 days to ensure the crust remains crisp and the whipped cream fresh.

Ingredients

Mini Pie Shells

14.1 oz Pillsbury refrigerated pie dough (1 box)

Chocolate Cream Filling

3.9 oz instant chocolate pudding mix (1 package)
3 tbsp cocoa powder, sifted
1 cup half and half
1/2 cup milk
1 tsp vanilla extract

Mint Whipped Cream Topping

1 cup heavy cream
1/4 cup powdered sugar
1 tsp mint extract (taste and add more if needed)
Green gel food coloring

Instructions

Mini Pie Shells

Preheat oven to 450 degrees F (230 degrees C).
Gently unroll pie crust onto a clean cutting board. Using a 3-inch biscuit or cookie cutter, cut out circles from the dough. You should yield between 12 to 15 circles; re-roll the remaining dough as necessary to get more circles.
Lightly spray the bottom of a mini muffin tin with non-stick cooking spray.
Place each dough circle over the wells of the muffin tin. Gently work the dough down the sides and press it firmly onto the bottom of each well to form a cup. Ensure there is a small space between each pie crust to prevent them from sticking.
Prick the bottoms of the pie crusts several times with a fork to prevent them from puffing up during baking.
Bake for 4-5 minutes, or until the edges are lightly golden brown.
Allow the mini pie shells to cool in the tin for a few minutes, then gently twist each one to remove and transfer to a wire cooling rack to cool completely.

Chocolate Cream Filling

In a medium-sized bowl, whisk together the instant chocolate pudding mix, sifted cocoa powder, half and half, milk, and vanilla extract until smooth and well combined. The mixture will thicken as you whisk.
Transfer the prepared chocolate cream filling to a piping bag (or a large Ziploc bag with a corner snipped off) and refrigerate for at least 15 minutes to allow it to set further.

Mint Whipped Cream Topping

In a clean, chilled mixing bowl, beat the heavy cream with an electric mixer on medium-high speed until stiff peaks have formed.
Gradually beat in the powdered sugar until fully combined and the whipped cream is smooth.
Gently fold in the mint extract and green gel food coloring until the desired flavor intensity and color have been achieved.
Transfer the mint whipped cream to a separate piping bag (or a large Ziploc bag) and refrigerate until ready to use.

Assembly

Once the mini pie shells are completely cool, pipe the chocolate cream filling into each shell, filling them almost to the brim.
Top each pie with a generous swirl of mint whipped cream.
Optionally, sprinkle with chocolate jimmies, a dusting of cocoa powder, chocolate curls, or a drizzle of chocolate syrup for extra appeal.
Serve immediately, or refrigerate until ready to serve for best results.
