12 ounces pasta (we used gemelli, but any dried pasta is fine)
1 pound mushrooms (sliced thick)
6 tablespoons unsalted butter (divided)
1 tablespoon extra virgin olive oil
1 medium shallot (minced)
5 garlic cloves (minced)
4 sprigs fresh thyme (leaves removed and minced)
½ teaspoon chili flakes (optional)
⅓ cup dry white wine (Pinot Grigio or Sauvignon Blanc are good choices)
¼ cup chicken stock (or vegetable broth for vegetarian)
1 cup heavy cream
Salt and freshly ground black pepper (to taste)

Fresh parsley (roughly chopped)
Parmesan cheese (freshly grated)
Extra chili flakes (optional, for serving)
Instructions
Pasta Preparation
Cook pasta according to package directions until al dente. Reserve ½ cup of the starchy pasta water before draining.
Mushroom Sauce Creation
While the pasta is cooking, heat 4 tablespoons of butter and the olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced mushrooms, sprinkle with salt and pepper, and sauté until golden brown and their moisture has been released and evaporated, about 5-7 minutes.
Add the minced shallots and sauté until translucent, about another minute. Stir in the minced garlic, fresh thyme, and chili flakes (if using) and sauté for one more minute until fragrant.
Increase the heat to high and deglaze the pan with the white wine and chicken stock. Scrape up any browned bits from the bottom of the pan with a wooden spoon. Let the liquid cook down until the alcohol has evaporated, approximately 30 seconds to a minute.
Reduce the heat to medium, then pour in the heavy cream, stirring to coat the mushrooms. Add about ¼ cup of the reserved pasta water to the sauce to help thicken it. If the sauce is not thick enough, add a little more pasta water, one tablespoon at a time, continuing to simmer and reduce until your desired consistency is reached.
Once the pasta sauce has thickened to your liking, turn off the heat. Add the cooked, drained pasta and the remaining 2 tablespoons of butter into the sauce, tossing vigorously until the butter is fully melted and the pasta is thoroughly coated.
