Sunday brought more beautiful weather, and we spent the afternoon at a friend’s house. The kids had a fantastic time playing outdoors, soaking up the sunshine, while the adults enjoyed a classic barbecue. My contribution to the feast was garlic bread and, of course, a fruit salad. On our way home from Discovery Kingdom, I made a crucial stop at one of my absolute favorite local farmer’s markets. The stalls were brimming with an incredible array of super-ripe, fresh produce, and I couldn’t resist loading up our basket.

My son, Reece, with his keen eye for unique produce, immediately spotted “Dragon’s Eggs Pluots,” which quickly made their way into our selection. Along with those intriguing fruits, I gathered a bounty of ripe peaches, juicy nectarines, sweet grapes, vibrant limes, aromatic mint, and more. Ingredients

8 cups fresh fruit, chopped (nectarines, peaches, strawberries, blueberries, kiwi, grapes, melon, plums, pluots, etc.)
¾ cup granulated sugar
¼ cup water
½ cup lime juice (OR ¼ cup lime juice and ¼ cup rum for an adult version)
2 tbsp fresh mint, chiffonade (thinly sliced)

Instructions

Combine granulated sugar and water in a small saucepan over low heat.
Heat gently, stirring occasionally, until the sugar is fully dissolved and the mixture forms a clear simple syrup. Remove from heat and let it cool completely.
Once the simple syrup has cooled, stir in the fresh lime juice. If you’re making an adult version, this is the step to add the rum along with the lime juice.
In a large bowl, combine all the chopped fresh fruit.
Drizzle about half of the prepared lime mixture (simple syrup + lime juice/rum) over the chopped fruit. Gently stir with a spatula or large spoon until the fruit is lightly coated.
Continue adding the lime mixture gradually, just until the fruit is lightly coated and glossy. Be careful not to overdress the fruit; you want it to be flavorful, not sitting in a puddle of liquid at the bottom of the bowl.
Just prior to serving, sprinkle the fresh chiffonade mint over the salad and gently toss one last time.
