Ingredients

30 oz frozen hash browns
16 oz diced ham
1 yellow bell pepper, seeded and diced
1 red bell pepper, seeded and diced
5 green onions, thinly sliced
12 eggs
1 cup Almond Breeze Almondmilk, original unsweetened
8 oz shredded cheese (I used a Mexican blend)
Salt and pepper to taste
Chives to garnish

Instructions

In a large bowl, combine the eggs and almondmilk and whisk thoroughly until well combined.
Generously season the egg mixture with salt and freshly ground black pepper to enhance the flavors.
Prepare your 6-quart slow cooker by generously spraying the insert with cooking spray, or for even easier cleanup, use a slow cooker liner.
Begin layering your casserole: spread half of the frozen hash browns evenly at the bottom of the slow cooker. Follow with half of the diced ham, half of the diced bell peppers (yellow and red), half of the thinly sliced green onions, and half of the shredded cheese. Remember to season each layer lightly with salt and pepper as you go; this is crucial for a flavorful casserole. Repeat the layering process with the remaining halves of all ingredients.
Carefully pour the whisked egg and almondmilk mixture over the top of the layered ingredients, ensuring it disperses evenly throughout the casserole.
