Irresistible Cheesy Brussels Sprouts with Crispy Bacon: Your New Favorite Side Dish
Side dishes often bear the brunt of being overlooked, playing a humble supporting role to the main course. But what if a side dish could not only hold its own but truly shine, captivating every diner at the table? For many, Brussels sprouts are a polarizing vegetable; people either adore them or despise them. This enduring reputation, however, often stems from outdated cooking methods that rendered them bitter and mushy. Modern culinary approaches, particularly those that embrace rich flavors and textures, can entirely reinvent these nutrient-dense mini cabbages.
As a home cook, I consistently focus on creating main dishes that delight my family. Consequently, side dishes can sometimes feel like an afterthought. While my boys happily devour salads, I’m always striving to introduce new vegetables and continuously offer those that might not win them over on the first try. Brussels sprouts certainly fell into that category. I’m a big fan, but my husband? Not so much. That’s precisely why I developed this recipe: to transform skeptical eaters into Brussels sprouts enthusiasts. Serving these vibrant greens smothered in a luxurious creamy cheese sauce and topped with savory, crispy bacon is an ingenious way to introduce them. And let me tell you, they are undeniably good!
Why This Cheesy Brussels Sprouts Recipe Becomes an Instant Hit
The secret to transforming the humble Brussels sprout lies in pairing it with ingredients known for their universal appeal. This recipe doesn’t just enhance Brussels sprouts; it completely redefines them. The bitterness often associated with the vegetable is expertly balanced by the creamy richness of cheese and the salty, smoky crunch of bacon. It’s a culinary trio designed to convert even the most ardent vegetable skeptics. This combination creates a harmonious blend of textures and tastes that is comforting, satisfying, and utterly addictive.
The Decadence of Creamy Cheese Sauce
A velvety, rich cheese sauce is the heart and soul of this remarkable side dish. It’s not just about covering the Brussels sprouts; it’s about enveloping each tender bite in a blanket of savory, gooey goodness. The sauce’s creaminess provides a beautiful counterpoint to the sprouts’ natural texture, while the robust cheese flavor adds depth and indulgence. As it bakes, the sauce becomes wonderfully bubbly and slightly browned on top, creating an irresistible crust. For busy weeknights or when you’re looking for a clever shortcut without compromising on flavor, using a pre-made creamy three-cheese cooking sauce starter can be a game-changer, allowing you to achieve gourmet results with minimal effort. This convenience means less time fussing in the kitchen and more time enjoying delicious food with your family.
The Irresistible Allure of Crispy Bacon
If there’s one ingredient that can elevate almost any dish, it’s bacon. In this recipe, crispy, crumbled bacon is far more than a garnish; it’s a crucial textural and flavor component. The salty, smoky crunch of the bacon provides a fantastic contrast to the tender sprouts and smooth cheese sauce, adding an explosion of flavor in every mouthful. The rendered bacon fat, if used, can also contribute a depth of flavor that further enhances the dish. Cooking the bacon to a perfect crispness and then crumbling it generously over the baked sprouts ensures maximum impact, making this side dish not just good, but truly unforgettable.
Perfecting Your Brussels Sprouts: Selection and Preparation Tips
To truly unlock the potential of this recipe, start with the freshest Brussels sprouts available. Look for sprouts that are firm, bright green, and tightly packed. Avoid any with yellowing leaves, soft spots, or a strong, sulfurous smell, as these indicate they are past their prime. Proper preparation is key to avoiding the common pitfalls that give Brussels sprouts a bad name.
Trimming: Begin by trimming off the tough, woody stem end of each sprout. Remove any loose or discolored outer leaves.
Halving: For larger sprouts, cutting them in half ensures more even cooking and creates additional surface area for the delicious cheese sauce to cling to. Smaller sprouts can be left whole if preferred, but halving generally yields a better texture and flavor distribution.
Par-boiling: The initial boiling step is essential. Place the trimmed sprouts in a 3-quart saucepan and cover them with just enough water. Bring to a boil and cook for 6 to 8 minutes, or until they are “crisp-tender.” This means they should be cooked through but still retain a slight bite and their vibrant green color. Overcooking at this stage will lead to mushy, unappetizing sprouts. Immediately drain them thoroughly after cooking to remove excess water, which could thin out your rich cheese sauce.

Ingredients
1 1/2 lb fresh Brussels sprouts (1 to 1 1/2 inch, cut in half – approximately 6 cups)
2 tablespoons butter or margarine
1 medium onion, chopped (about 1/2 cup)
2 tablespoons Gold Medal® all-purpose flour
1 can (18 oz) Progresso™ Recipe Starters™ creamy three cheese cooking sauce
1/2 cup shredded Cheddar cheese (2 oz)
6 slices bacon, crisply cooked and crumbled
Instructions
Preheat your oven to 350°F (175°C). In a 3-quart saucepan, place the trimmed and halved Brussels sprouts. Add just enough water to cover the sprouts. Bring to a boil and cook for 6 to 8 minutes, or until they are crisp-tender. This means they should be cooked through but still have a slight bite. Drain the water thoroughly and transfer the cooked Brussels sprouts into an ungreased 2-quart casserole dish.
Using the same saucepan (no need to wash it!), melt the butter over medium-high heat. Add the chopped onion and cook for 2 to 3 minutes, stirring frequently, until the onion becomes crisp-tender and translucent. Sprinkle in the all-purpose flour, stirring constantly until it’s well blended with the butter and onion, forming a thick paste.
Gradually whisk in the Progresso™ Recipe Starters™ creamy three-cheese cooking sauce until the mixture is smooth and well combined. Bring the sauce to a boil, stirring constantly, then boil and stir for 1 minute to thicken. Remove the saucepan from the heat and stir in the shredded Cheddar cheese until it has completely melted into the sauce, creating a rich, velvety consistency.
Pour the warm cheese sauce evenly over the Brussels sprouts in the casserole dish. Gently mix everything together to ensure all the sprouts are coated in the decadent sauce.
Bake the casserole uncovered in the preheated oven for 25 to 30 minutes, or until the sauce is hot and bubbly, and the top is lightly golden. Once out of the oven, immediately sprinkle with the crisply cooked and crumbled bacon. Serve hot and enjoy this incredible side dish!

Delicious Variations and Perfect Serving Pairings
This Cheesy Brussels Sprouts with Bacon recipe is a masterpiece on its own, but it also lends itself beautifully to creative variations. Feel free to experiment with different cheeses; a sharp Gruyere, a nutty Parmesan, or even a blend of Monterey Jack and Colby can offer unique flavor profiles. For those who enjoy a little heat, a pinch of red pepper flakes stirred into the cheese sauce adds a wonderful kick. You can also bulk up the dish by adding other vegetables like sautéed mushrooms, diced bell peppers, or even roasted sweet potato cubes for extra sweetness. If you’re catering to vegetarian guests, simply omit the bacon or replace it with smoked paprika or toasted breadcrumbs for a similar texture and depth of flavor.
When it comes to serving, this versatile dish is an ideal accompaniment to a wide array of main courses. It’s a stellar match for classic comfort foods like roasted chicken, succulent pork loin, or a perfectly seared steak. Its rich flavors also make it a standout addition to any holiday table, from Thanksgiving to Christmas dinner, offering a vibrant and indulgent vegetable option. For a lighter meal, consider serving a generous portion of these Cheesy Brussels Sprouts as the main event, perhaps alongside a simple, crisp green salad or a bowl of quinoa.
