Ingredients

Graham Cracker Crust

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
8 tbsp unsalted butter

Marshmallow Cheesecake

24 oz cream cheese softened
2 tbsp heavy whipping cream
2 cups miniature marshmallows
1 tsp vanilla extract
1/2 cup powdered sugar

Milk Chocolate Ganache

9.3 oz milk chocolate bars 6 – 1.55 oz bars
1/3 cup heavy whipping cream

Topping

2 cups miniature marshmallows

Instructions

Graham Cracker Crust

Spray a 9-inch baking pan with cooking spray and line with parchment paper. This step makes removal and slicing much easier.
In a medium-sized bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Stir thoroughly with a fork until the butter is fully incorporated, ensuring all crumbs are moistened.
Transfer the crumb mixture to the prepared baking pan. Using the bottom of a flat glass or measuring cup, firmly press the crumbs evenly onto the bottom of the pan to create a compact crust. This is crucial for a sturdy base.
Refrigerate the prepared crust for at least 30 minutes. This allows the butter to solidify, setting the crust firmly in place.

Marshmallow Cheesecake

In a large mixing bowl, beat the softened cream cheese on medium-high speed for 2 to 3 minutes until it becomes light, airy, and fluffy. Ensure it’s completely smooth before proceeding.
Add the heavy whipping cream to the cream cheese mixture and continue to beat for an additional 2 minutes, until well combined and slightly thickened.
In a separate microwave-safe bowl, microwave 2 cups of miniature marshmallows on high heat for 30 seconds. Stir immediately until they are completely melted and smooth. Be careful not to overheat.
Add the vanilla extract to the melted marshmallows and stir vigorously to combine thoroughly.
Gradually add the marshmallow and vanilla mixture to the cream cheese mixture, beating on low speed until fully incorporated and the cheesecake filling is smooth and free of lumps.
Finally, add the powdered sugar to the cheesecake mixture and beat until just combined. Be careful not to overmix.
Pour the prepared marshmallow cheesecake filling evenly onto the chilled graham cracker crust. Cover the pan tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the cheesecake is completely firm and set.

Milk Chocolate Ganache

Break the milk chocolate bars into small pieces and place them in a heat-proof bowl. Smaller pieces will melt faster and more evenly.
In a small saucepan, heat the heavy whipping cream until it is scalding hot (just before boiling, with small bubbles forming around the edges). Immediately pour the hot cream over the broken chocolate pieces.
Allow the chocolate and cream mixture to sit undisturbed for 3 minutes. This allows the heat from the cream to melt the chocolate. After 3 minutes, stir gently with a whisk or spoon until the ganache is completely smooth and glossy.
Pour the warm ganache evenly over the top of the firm, chilled cheesecake layer. Tilt the pan gently to ensure it spreads to the edges.
Return the cheesecake to the refrigerator and let it chill for at least an additional 30 minutes, allowing the ganache to set.
Just before serving, evenly top the bars with the remaining 2 cups of miniature marshmallows. For that authentic s’mores experience, you can place the pan under a preheated broiler for about 30 seconds, or until the marshmallows are golden brown and slightly toasted. Alternatively, use a kitchen torch for controlled toasting, or simply leave the marshmallows untoasted for a softer texture.
