This recipe delivers all the classic Italian comfort you crave with minimal fuss. Key Ingredients for Perfect Lasagna Roll Ups

The beauty of this recipe lies in its simple yet impactful ingredients, each playing a vital role in creating that irresistible lasagna flavor. From the foundational pasta to the rich cheeses and aromatic herbs, every component contributes to a truly memorable meal. We use classic Italian staples to build deep, authentic flavors:

Lasagna Noodles: The foundation of our roll-ups. Opt for traditional flat lasagna noodles that can be easily boiled until al dente and then rolled. Oven-ready noodles are generally not recommended here as they don’t roll as well.
Frozen Spinach: Thawed and thoroughly drained, spinach adds a wonderful earthy flavor and a nutritional boost to the ricotta filling. Be sure to squeeze out as much moisture as possible to prevent a watery filling.
Ricotta Cheese: The star of the creamy filling. Full-fat ricotta offers the best texture and flavor.
Egg: Acts as a binder for the ricotta mixture, helping it hold together while baking.
Italian Seasoning: A convenient blend of dried herbs that brings a classic Italian aroma and taste.
Dried Basil & Oregano: Essential herbs that deepen the authentic Italian flavor profile.
Garlic Powder: Provides a savory kick that complements the cheese and herbs.
Fine Sea Salt & Freshly Ground Black Pepper: Crucial for seasoning the filling to perfection.
Parmesan Cheese: Freshly grated Parmesan adds a sharp, salty depth to the ricotta mixture.
Mozzarella Cheese: Divided for both the filling and the topping, this cheese offers that classic gooey, melty texture. Freshly grated is always best for superior melting.
Marinara Sauce: The robust base for baking. You can use your favorite jarred brand for convenience, or homemade if you have it.
Optional Protein: Lean ground beef, ground turkey, or Italian sausage can be browned and mixed into the filling or sauce for a heartier dish.
Fresh Parsley: A bright, fresh garnish to finish the dish with a pop of color and flavor.

Detailed Instructions for Assembly and Baking

For precise measurements and a convenient, printer-friendly version, you’ll find the full printable recipe card at the very end of this post.

Prepare the Filling: In a large mixing bowl, combine the thoroughly drained spinach, creamy ricotta cheese, large egg, robust Italian seasoning, dried basil, oregano, fragrant garlic powder, a pinch of sea salt, and a dash of freshly ground black pepper. Mix these ingredients together until they are well combined and the spinach is evenly distributed throughout the ricotta.
Incorporate Cheeses: Next, gently fold in the grated Parmesan cheese and a quarter cup of the mozzarella cheese into the ricotta mixture. Continue mixing until all the cheeses are fully incorporated and the filling is uniform.
Cook the Noodles: Bring a generously salted pot of water to a rolling boil. Carefully add the lasagna noodles and cook them according to package directions until they are perfectly al dente – tender yet still firm to the bite. Once cooked, drain the water thoroughly and rinse the noodles in cold water to prevent them from sticking together. Blot them dry gently with paper towels to remove excess moisture.
Prepare Baking Dish: Generously spread about 1 1/2 cups of your chosen marinara sauce across the bottom of a 9×13 inch baking dish. This will create a flavorful bed for your roll ups and prevent them from drying out.
Assemble the Roll Ups: Lay each cooked lasagna noodle flat on a clean surface. Evenly spread a generous layer (about 2-3 tablespoons) of the prepared spinach and ricotta filling over each noodle, leaving a small border around the edges. Carefully roll each noodle into a tight spiral, starting from one end.
Arrange and Sauce: Transfer the beautifully rolled lasagna spirals into the prepared baking dish, arranging them seam-side down to prevent unraveling. They should fit snugly in the dish. Once all roll ups are in place, pour the remaining marinara sauce over the top, ensuring each roll up is well coated.
Top with Cheese: Generously sprinkle the remaining mozzarella cheese over the sauced roll ups. This will create a delicious, bubbly, and golden crust as they bake.
Bake to Perfection: Cover the baking dish tightly with aluminum foil. Bake in a preheated oven at 375°F (190°C) for approximately 40 minutes. After this initial baking time, remove the foil and continue to bake for an additional 5-10 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
Serve and Enjoy: Allow the lasagna roll ups to rest for a few minutes after removing them from the oven before serving. Garnish with fresh chopped parsley if desired, and get ready to enjoy this delightful, individual serving of classic Italian comfort!

Considering adding meat to your lasagna roll ups? It’s incredibly easy! Simply brown 1 pound of lean ground beef, ground turkey, or Italian sausage in a skillet over medium heat. Once cooked through, drain any excess grease thoroughly. Allow the cooked meat to cool slightly before incorporating it directly into the spinach-ricotta filling mixture or stirring it into your marinara sauce. Then, proceed with the recipe instructions as written for a richer, heartier dish!

Don’t forget to thoroughly squeeze out the spinach! This crucial step prevents excess moisture from making your creamy filling too watery, which can lead to soggy lasagna roll ups. After thawing, place the spinach in a clean kitchen towel or several layers of paper towels and twist vigorously to extract as much liquid as possible. A drier spinach ensures a rich, creamy filling and maintains the perfect texture of your roll ups!

Storage and Make-Ahead Tips for Lasagna Roll Ups

One of the many advantages of these Lasagna Roll Ups is how wonderfully they adapt to various storage and make-ahead options. Whether you’re planning meals for the week, preparing for a busy evening, or stocking your freezer, these roll ups are incredibly convenient, ensuring you always have a comforting meal within reach.

Refrigerator Storage: If you have leftovers (which is rare!), store your baked lasagna roll ups in an airtight container in the refrigerator. They will remain fresh and delicious for up to 4 days. To reheat, you can warm them gently in the oven at 350°F (175°C) until thoroughly heated through, or for a quicker option, microwave individual portions until hot.
Freezer Instructions for Unbaked Roll Ups: To prepare these roll ups for the freezer, assemble them completely but do not bake them. Arrange the unbaked roll ups in a freezer-safe baking dish. Cover the dish tightly with a layer of plastic wrap, followed by a layer of heavy-duty aluminum foil to prevent freezer burn. Label with the date and freeze for up to 3 months. When you’re ready to enjoy, you can thaw them overnight in the refrigerator and then bake as directed, or bake them directly from frozen. If baking from frozen, simply add an extra 15-20 minutes to the covered baking time, ensuring they are heated through before uncovering for the final browning.
Freezer Instructions for Baked Roll Ups: You can also freeze already baked roll ups. Once cooled completely, transfer them to an airtight, freezer-safe container or wrap individual portions tightly in plastic wrap and foil. Freeze for up to 2-3 months. Reheat in the oven from frozen at 350°F (175°C) for about 30-40 minutes, or until heated through.
Make-Ahead Option (Refrigerated): For ultimate convenience, you can assemble the entire dish up to 24 hours in advance. Simply prepare the roll ups, arrange them in the baking dish, cover tightly with plastic wrap, and store them in the refrigerator. When you’re ready for dinner, just uncover and pop the dish directly into the oven to bake according to the recipe instructions. This is a fantastic way to enjoy a fresh, homemade meal with minimal last-minute prep.

Exciting Variations to Elevate Your Lasagna Roll Ups

While our classic Lasagna Roll Ups recipe is a showstopper on its own, it also serves as a fantastic canvas for culinary creativity. Don’t hesitate to experiment with these variations to tailor the dish to your personal taste, dietary needs, or whatever ingredients you have on hand. Each adjustment can bring a new dimension of flavor and texture to this beloved comfort food.

Boost the Protein: For a more substantial and satisfying meal, consider integrating additional protein. Cooked ground beef, savory Italian sausage, or shredded chicken can be mixed directly into the ricotta filling for an extra layer of heartiness. Alternatively, you can stir these cooked meats into your marinara sauce to create a rich, meaty sauce that coats every roll-up.
Amp Up the Cheese Factor: If you’re a true cheese lover, feel free to mix in more mozzarella cheese into the filling, or even introduce other delicious cheeses. Provolone adds a sharp, nutty flavor, while a touch of smoked mozzarella can bring a unique smoky depth. A sprinkle of asiago or fontina would also be delightful.
Incorporate More Veggies: Enhance the nutritional value and texture by sautéing finely diced mushrooms, colorful bell peppers, or tender zucchini. Once cooked and any excess moisture is drained, fold them into the ricotta filling for added flavor and a lovely textural contrast. Finely chopped carrots or onions could also be added to the sauce.
Add a Touch of Heat: For those who appreciate a little kick, stir in a pinch of red pepper flakes into the ricotta filling or the marinara sauce. Adjust the amount to your preferred level of spice.
Creamy Alfredo Twist: Swap out the traditional marinara for a luxurious, creamy Alfredo sauce. This variation transforms the dish into a rich, white sauce lasagna roll up, offering a completely different but equally delicious flavor profile. You might also consider adding some cooked chicken or broccoli to this version.
Make it Gluten-Free Friendly: For guests or family members with gluten sensitivities, simply use high-quality gluten-free lasagna noodles. Many brands offer excellent gluten-free alternatives that will allow everyone to enjoy this flavorful dish without sacrificing taste or texture.
Herb Garden Freshness: Beyond Italian seasoning, consider adding fresh herbs like finely chopped fresh basil, oregano, or even a hint of fresh thyme to your ricotta filling. Fresh herbs brighten the flavors significantly.

Frequently Asked Questions About Lasagna Roll Ups

Can I use fresh spinach instead of frozen in this Lasagna Roll Ups recipe?

Absolutely! Using fresh spinach is a wonderful way to enhance the flavor and texture of your lasagna roll ups. You’ll need approximately 5-6 cups of fresh spinach to yield the equivalent amount of frozen spinach once cooked. Simply sauté the fresh spinach in a pan with a tiny bit of olive oil until it is fully wilted. Once cooked, let it cool down slightly, then place it in a clean kitchen towel and squeeze out any excess moisture thoroughly. This step is crucial to prevent the filling from becoming watery. Once drained, mix it into the ricotta filling as directed in the recipe.

Why are my lasagna roll ups watery, and how can I prevent it?

A watery filling is a common issue and usually stems from excess moisture in the ingredients. The two main culprits are spinach and ricotta. To prevent watery lasagna roll ups, ensure you vigorously drain and squeeze your thawed spinach using a clean kitchen towel or paper towels until it’s as dry as possible. For the ricotta, opt for whole milk ricotta cheese, as lower-fat versions tend to contain more water. Some brands can be quite wet, so if your ricotta seems particularly liquidy, you can also place it in a fine-mesh sieve lined with cheesecloth and let it drain for about 30 minutes before mixing. This will help create a rich, firm, and creamy filling.

What are the best side dishes to serve with lasagna roll ups?

These hearty Lasagna Roll Ups pair beautifully with a variety of complementary side dishes that add freshness and balance to the meal. A crisp, refreshing side salad is always an excellent choice, such as our vibrant apple salad with its sweet and savory notes, or a zesty citrus salad for a bright contrast. To round out the Italian experience, don’t forget a warm, crusty bread! A side of savory air fryer garlic bread is always a hit, or you could impress your guests with this elegant garlic herb bread wreath. For an extra touch, some steamed green beans with a drizzle of lemon, or roasted asparagus, would also be lovely additions.

Expert Tips for the Best Lasagna Roll Ups

Making delicious Lasagna Roll Ups is straightforward, but a few expert tips can elevate your dish from great to absolutely exceptional. Follow these pointers to ensure your roll ups are perfectly textured, full of flavor, and hold together beautifully, making your cooking experience as smooth as possible and your end result truly remarkable.

Prevent Sticky Noodles: After boiling your lasagna noodles until al dente, quickly drain them and lay them flat on a piece of parchment-lined baking paper or a lightly greased surface. This crucial step prevents them from sticking to each other, making them much easier to handle and fill without tearing. Rinsing them briefly under cold water after draining also helps stop the cooking process and removes excess starch.
Even Filling Distribution: Use the back of a spoon or an offset spatula to spread the creamy ricotta mixture evenly across each lasagna noodle. Make sure to leave a small gap (about half an inch) around the edges of the noodle. This small border is important because it prevents the filling from oozing out excessively when you roll them up and as they bake, keeping your roll ups neat and tidy.
Secure Rolling Technique: When placing your lasagna roll ups into the baking dish, always arrange them seam-side down. This simple technique helps them maintain their spiral shape and prevents them from unraveling during the baking process, ensuring each roll-up looks as good as it tastes.
Achieve Perfect Moisture and Melt: Start by baking the lasagna roll ups covered with aluminum foil. This traps moisture, ensuring the noodles remain tender and the filling stays moist and steamy. For the last 5-10 minutes of baking, remove the foil. This allows the cheese on top to get beautifully golden brown and bubbly, creating an irresistible, slightly crispy crust.
Freshly Grated Cheese is Key: While pre-shredded cheese is convenient, it often contains anti-caking agents that can hinder smooth melting and sometimes impart a slightly grainy texture. For the absolute best texture, melt, and flavor, take a few extra minutes to grate fresh mozzarella and Parmesan cheese yourself. You’ll notice a significant difference in the creaminess and richness of your finished dish.
Don’t Overcook the Noodles: Boil the lasagna noodles just until al dente. Overcooked noodles can become mushy and difficult to roll, and they will continue to soften as they bake in the sauce. A slight firmness is perfect for rolling.
Season the Sauce: While using a good quality jarred marinara is fine, taste it before assembling. A pinch of extra salt, pepper, a dash of dried oregano, or a fresh basil leaf can elevate its flavor profile significantly, tying all the components together.
